Satay or sate, is a dish of marinated, skewered and grilled meat, served with a spicy peanut sauce dip, or peanut gravy, and slivers of onions and cucumbers, and ketupat (rice cakes). Satay may consist of diced or sliced chicken, goat, mutton, beef, pork, fish, other meats or tofu. These are grilled or barbecued over a wood or charcoal fire, then served with various spicy seasonings. Satay is originated in Java, Indonesia. Satay is also popular in many other South-east Asian countries, such as Malaysia, Singapore, Brunei, Thailand, and southern Philippines. In this preparation, instead of preparing satay in the authentic style by grilling the meat over charcoal fire, and then served with spicy peanut gravy, we are going to do a stir-fried dish - fresh sliced pork stir-fry in crunchy peanut butter and shrimp paste. In Kuching, dishes made from Kueh Tikus (Rice Flour Noodles) and sold in noodles stalls are usually in broth style with meat condiments such as pork or seafood. It seemed that Kuching consumers aren't creative in noodles cuisines. Stalls and restaurants are serving the same noodles cuisines that has been around ever since noodles have entered the native cuisines of Malaysia. In my home style recipes, I like to recreate new dishes from our local Kuching or Malaysian cuisines and ingredients.
